For Assassin's Creed I'm mostly familiar with Odyssey and Valhalla, so for others I'd have to google everything.

Unwilling to address: I won't write self-insert, abuse, alpha/beta/omega, bdsm and all sex stuff that's above "the adventurous vanilla lover" (for example: handcuffs yes, full bondage no, I couldn't write it in a way you'd like to read it), incest, polyamory (I'm open to threesome, but I've never written it), mpreg, self-harm, rape, abuse (especially child abuse), underage, torture. I might have forgotten to explicitly name a topic, but I think you get what I mean.

I also can't write disabilities, mental health issues. The reason is that I don't know enough about those topics to write about them without falling into stereotypes or other ways to wrongly represent them. The same does apply for trans and other gender related topics. (L)GB is fine, the rest not so much for my lack of knowledge.

Notes: I know I have some unfinished works in my AO3, but be reassured that I'll definitely finish yours!! None of my fics is abandoned. And if the story gets me, I'm not opposed if it gets accidentally longer than promised, but I'd say that's depending on how the story develops. Some need to be long, some are better short. ;)

For Sherlock: I know there is no Sherlock fic up yet. But be assured that I know this fandom well. I've read what feels like thousands of fics, watches the show multiple times and am currently writing Johnlock. The fics just grow longer than expected. You know how it is.

If you don't know what I should write, I can also introduce my wips to you, my undeveloped ideas or make up something with you together.
The way we work together is also open. I'm okay with keeping the result a surprise, but I'm also okay with giving you regular updates and let you take part in decisions.

I'm constantly experimenting and trying to improve, it could happen that the result won't be exactly the style of the drawing you liked but a version of that style. I try to get as close as possible.

Of course I'll keep you updated with my progress. You can choose whether you want the result to be a surprise or if you want to participate more actively, then I'll give you decision to make and/or will ask for your feedback.
